Bread Salad
• 2 cups old bread for croutons
• 1 clove minced garlic
• salt & pepper
• olive oil
• 4-5 Large Tomatoes
• 1 large red onion
• handful of fresh basil
• 1/4 lb mozzarella
• 12 black olives
Dressing
• 2 garlic cloves
• 1.5 tbsp honey
• 1/4 cup red wine vinegar
• 1 tbsp balsamic vinegar
• basil leaves
• 3/4 cup olive oil
1. Cut bread into 1.25” pieces. Toss with some olive oil and minced garlic, salt & pepper. Place on cookie sheet and toast.
2. Into large bowl:
• Cut tomatoes into bite sized chunks.
• Cut onion coarsely into pieces.
• Add coarsely chopped basil and cubed mozzarella.
• Add olives
3. Make basil vinaigrette:
In food processor - add all ingredients and pulse till smooth.
4. Add dressing to bowl, toss, then add croutons last minute before serving and toss again.
