Bread Salad

  1. 2 cups old bread for croutons

  2. 1 clove minced garlic

  3. salt & pepper

  4. olive oil

  5. 4-5 Large Tomatoes

  6. 1 large red onion

  7. handful of fresh basil

  8. 1/4 lb mozzarella

  9. 12 black olives


Dressing

  1. 2 garlic cloves

  2. 1.5 tbsp honey

  3. 1/4 cup red wine vinegar

  4. 1 tbsp balsamic vinegar

  5. basil leaves

  6. 3/4 cup olive oil

  1. 1. Cut bread into 1.25” pieces. Toss with some olive oil and minced garlic, salt & pepper. Place on cookie sheet and toast.


  2. 2. Into large bowl:

  3. Cut tomatoes into bite sized chunks.

  4. Cut onion coarsely into pieces.

  5. Add coarsely chopped basil and cubed mozzarella.

  6. Add olives


  7. 3. Make basil vinaigrette:

  8. In food processor - add all ingredients and pulse till smooth.


  9. 4. Add dressing to bowl, toss, then add croutons last minute before serving and toss again.
