Nettle Soup

Despite it’s nasty sting, nettle is one of the most delicious and nutritious foods being very high in iron calcium, potassium and manganese and vitamins A, C, & D.

When cooked or dried it loses it’s sting!

  1. 2 cups chicken/vegetable stock

  2. 3 large potatoes into pieces

  3. 1 medium onion chopped

  4. 3 cloves garlic chopped

  5. any other herbs to taste

  6. 1 cup washed packed nettle leaves

  7. hot pepper sauce to taste

  8. dash of worcestershire sauce

  9. salt & pepper to taste

1. Boil potatoes in stock


2. Saute onions, garlic and herbs in olive oil


3. Add nettles, onion & garlic mixture to potatoes when done.


4. When nettles appear wilted blend till smooth. Add milk/soy milk if creamier texture desired


5. Season to taste
