Despite it’s nasty sting, nettle is one of the most delicious and nutritious foods being very high in iron calcium, potassium and manganese and vitamins A, C, & D.
When cooked or dried it loses it’s sting!
Nettle Soup
Despite it’s nasty sting, nettle is one of the most delicious and nutritious foods being very high in iron calcium, potassium and manganese and vitamins A, C, & D.
When cooked or dried it loses it’s sting!
• 2 cups chicken/vegetable stock
• 3 large potatoes into pieces
• 1 medium onion chopped
• 3 cloves garlic chopped
• any other herbs to taste
• 1 cup washed packed nettle leaves
• hot pepper sauce to taste
• dash of worcestershire sauce
• salt & pepper to taste
1. Boil potatoes in stock
2. Saute onions, garlic and herbs in olive oil
3. Add nettles, onion & garlic mixture to potatoes when done.
4. When nettles appear wilted blend till smooth. Add milk/soy milk if creamier texture desired
5. Season to taste
